Sorry for responding so late to your message.
I recommend "The Vegan Handbook" for a whole lotta meat substitution ideas.
Here's what I use for my substitutions:
	tofu = chicken
	seitan = beef
	textured vegetable protein (TVP) = pork
	tempeh = liver (yeah, it's hard to find American dishes where tempeh
	                fits in)
