Re: Vegetarian Options



The Polenta with Eggplant sounds good, as do the Pepper, Eggplant,
Mushrooms, and Olive Turnovers and Stuffed Peppers.

If you were going to a party, what dish below would you pick?

Vegetarian and Vegan Options


  • Alternating Layers of Roasted Garlic and Thyme Polenta with Grilled Eggplant, Braised

Spinach, Leeks and a Chunky Tomato Basil Coulis*

  • Vegetable Curry*

  • Moroccan Phyllo Crescents filled with Onion, Garlic, Assorted Peppers, Eggplant,

Mushrooms, and Olives, finished with a Curried Golden Tomato and Mint Reduction*

  • Barley Salad (Barley, scallions, tomato, cucumber and mint lime vinaigrette) topped with

sesame coated Eggplant, with Sautéed vegetables, frizzled leaks and green coconut curry

sauce*

  • Roasted Eggplant with an onion, mustard and honey glaze, served on a bed of braised

spinach with nutmeg and cinnamon*

  • Goat Cheese, Artichoke and Red Pepper Tart/Wild Mushroom and Caramelized Shallots

  • Portabella Mushrooms Stuffed with artichokes, red peppers, parsley and balsamic

I think changing the vegetable skewers to a heartier vegan dish will do the trick.  My favorite is the Seasonal Grilled Vegetables in a Garbanzo Bean Pesto.  This with some passes appetizers and mashed potatoes will be quite filling.  I attached a vegan/vegetarian menu for your review.  Let me know which you choose and I will make changes. 

 

As for doubling the stations, I wouldn’t suggest it.  There won’t be much room to have 5 or 6 stations and seating for everyone.  Plus, you would need more servers to man the stations.  Also, if we split the food, we couldn’t keep every station open the entire time.  Half way through we would only have enough food to replenish 1 of each station and would have to close the second of each station.  Although we will not run out of food, guests might get the impression that we have.

 

Also, I am informing all of my clients that I am leaving Wildflour.  I understand clients choose a caterer for not only the food but also for whom they will work with.  I know Wildflour will do an amazing job without me :o( because it is a great company.  The only reason I am leaving is that I received an offer that I couldn’t refuse.  I will be the Director of Sales and Events at Fireside Catering in Burlington MA starting November 1st.  Please feel free to call my cell if you need help with anything, no matter if I am still with Wildflour or not.

We expect a handful of Vegans and Strict Vegetarians. 

 

What do you suggest?

 

Also, we’re concerned about crowding at the food points.  Is it possible to have duplicate stations of different side of the room in order to mitigate any crowding issue?
