I would try re-installing Signal on your iPhone. You'll likely need to
reverify via your phone number, but there shouldn't be a need to connect
any email address to your account (in fact, if there were, that would be
an obvious security hole).
You'll probably also need to reinstall it on your iPad as well; Flora can
correct me, but I think you need to link your iPad to your iPhone (rather
than re-registering via a phone number) when you do this in order to avoid
having the iPad override or uninstall Signal on your iPhone.
