- Bok choi is the celery-like stuff that are in chinese food dishes. They're mostly pretty tasteless, but add a crunch -- sorta like water chestnuts or bamboo shoots. OK, good -- sprouts are acceptable. How about peas? Snap peas? Snow peas?
